The Fyreza Chef Evolution is a hand-forged chef's knife made from C125S carbon steel with a 25 cm blade length, 7 cm blade height, 34 cm overall length, and weighing around 300 g. It features a solid walnut wood handle, riveted full-tang construction, and includes a leather sheath. Made for the kitchen, grill, and open fire.
The evolution of our best-selling Chef's Knife
Our original Chef's Knife was a bestseller for years. For the Chef Evolution, we combined customer feedback and experience from the forge: the balance between handle and blade has been re-tuned, the blade geometry refined, and the design made more distinctive. The result is a knife that feels like you've always used it after just a few minutes.
The wide, slightly curved blade allows for powerful chopping as well as delicate cutting tasks. The visible forged finish makes each piece unique.
Why C125S carbon steel?
C125S has a carbon content of around 1.25%. It can be sharpened to a degree that stainless steel cannot achieve, holds its edge longer, and is easier to resharpen. Over time, the blade develops a natural patina that protects against corrosion and gives the knife its character.
Walnut Wood Handle
The ergonomically shaped walnut wood handle fits securely in the hand and has a warm, natural feel. The blade extends through the entire handle and is riveted, ensuring stability and a lifespan far beyond that of normal kitchen knives.

Three knives from our workshop, three different tasks. Here's how to find the right one:

What is the Chef Evolution suitable for?
The Chef Evolution is a versatile kitchen knife for vegetables, meat, fish, and herbs. With a blade length of 25 cm and a height of 7 cm, it works efficiently in the kitchen, at the grill, and in outdoor cooking. It has been explicitly developed for kitchen use, grilling, and open fires.
What is C125S carbon steel and why is it better than stainless steel?
C125S is a carbon steel with approximately 1.25% carbon content – significantly higher than stainless steel. The result: a harder, sharper blade with better cutting performance. Carbon steel can be ground finer and holds its edge longer. It requires a little more care than stainless steel – but gets better with every use.
How to sharpen the Chef Evolution correctly?
Recommended sharpening angle: 15–17° per side. Coarse sharpening stone (400–800 grit) for building the edge, medium stone (1000–2000) for regular touch-ups, fine stone (3000–6000) for refining. Finish by polishing on a leather strop. Carbon steel takes an edge faster than stainless steel.
How often should the knife be sharpened?
With regular use, resharpen every 2–4 weeks. Daily honing on a sharpening steel significantly extends the edge retention. Those who use the knife intensively every day should hone weekly. C125S holds its edge longer than many stainless steels.
How to care for a hand-forged carbon steel knife?
After each use, wash immediately and wipe dry – never in the dishwasher. Occasionally rub with camellia oil or mineral oil. The developing patina naturally protects the blade from corrosion. With proper care, the Chef Evolution will last for decades.
What does riveted full tang construction mean?
In a full tang construction, the blade extends continuously through the entire handle. The rivets permanently fix the blade and handle scales. The result: maximum stability, perfect balance, and a lifespan far beyond ordinary kitchen knives – especially important for intensive use in outdoor cooking.
Chef Evolution vs. Santoku – which one is right for me?
The Santoku has a flat blade belly – ideal for push-cutting vegetables and fish. The Chef Evolution has a European blade geometry with more belly – ideal for rocking cuts and more versatile tasks. With a blade length of 25 cm, it is significantly longer than most Santoku knives and better suited for large cuts of meat.
Chef Evolution vs. Nakiri – what's the difference?
The Nakiri is a Japanese vegetable knife with a straight blade and blunt tip – specialized in cutting vegetables. The Chef Evolution is an all-rounder for vegetables, meat, fish, and all other kitchen tasks. If you want just one knife that can do everything, the Chef Evolution is a better choice.
