Product description

The Fyreza Gutting Knife Set consists of two handmade hunting knives made from Böhler N690, stainless, 58 HRC: the large knife with a 15 cm blade (26 cm overall, approx. 260 g) and the small knife with a 7 cm blade (15 cm overall, approx. 110 g). Blade thickness 4 mm, wooden handles, combined leather sheath made of vegetable-tanned cowhide. Set weight approx. 500 g.

Two knives, all steps of field dressing

A gutting knife set has been part of a hunter's basic equipment for centuries. The large knife is for field dressing and butchering: controlled cuts along the hide, safe opening of the belly, work on joints. The small knife handles fine work and skinning, where a short, agile blade works more cleanly. Separating rough and fine work means cleaner game meat, less effort, more safety.

Böhler N690, stainless, 4 mm thick

N690 is a stainless chromium steel from Austria that does not tarnish when exposed to moisture and blood, holds its edge for a long time, and can be resharpened in the field with a small stone. The 4 mm thick blades are designed for toughness, even in cold weather, not for filigree work.

Handle and Sheath

The oiled wooden handles remain grippy even when wet and cold and dampen vibrations. The combined sheath made of vegetable-tanned cowhide is dimensionally stable, quiet when drawn (important for stalking), and the small knife can be detached and carried separately.

Areas of Application

  • Hunting and field work: field dressing, skinning, butchering in the field
  • Bushcraft and outdoor
  • Camp kitchen

For transport, the set belongs in the sheath, securely stowed in the backpack. What German and Austrian weapons laws say about fixed-blade knives over 12 cm can be found in our article on knife law.

Care Instructions

  • Rinse with water after use, dry, do not put in the dishwasher
  • Oil wooden handles occasionally, care for leather with leather grease from time to time
  • Resharpen in the field with a whetstone, or via our sharpening service

What is a "Waidbesteck" and what is it used for?

A "Waidbesteck" is a traditional hunting knife set that has been an essential part of hunters' equipment for centuries. It consists of a large main knife for rough tasks such as gutting and butchering game, and a smaller sticking or boning knife for fine work such as skinning and detailed cuts. The Fyreza Waidbesteck thus covers all stages of work in the hunting ground – from the first cut to preparing game for the kitchen.

What steel is the Fyreza Waidbesteck made from?

Both knives in the set are made from Böhler N690 – a high-quality stainless chromium steel produced in Austria. N690 is one of the most proven outdoor and hunting steels: it is highly corrosion-resistant to moisture and blood contact, very easy to resharpen in the field, and tough and break-resistant even in cold conditions. This steel is deliberately used by many professional hunting knife manufacturers because it prioritizes reliability over extreme hardness values.

What is the difference between the large and small knife in the set?

The large main knife is designed for rough work in the hunting ground: controlled cuts along the hide, safe opening of the abdominal cavity, and precise work on joints and bones. The small sticking or boning knife handles the fine work: it is particularly agile for skinning, ideal for detailed tasks, and can be detached from the sheath and carried separately. Together, they optimally cover every work step.

Can the small knife be carried separately?

Yes – the small knife is designed so that it can be detached from the combined leather sheath and carried separately. This is a crucial practical advantage: when stalking or on short hunting trips, you only take what you need. The small knife is also suitable as a standalone hunting or outdoor knife for lighter tasks in the field.

What material is the sheath made of and why is that important?

The combined sheath is made from vegetable-tanned cowhide leather. Vegetable-tanned leather is particularly durable, dimensionally stable, and develops an elegant patina over time. Crucially for hunting: the leather sheath is quiet when drawing – an important advantage when stalking, where every sound counts. Additionally, there is no metallic clanking, and the small knife can be removed separately.

How do I care for the Waidbesteck after use in the hunting ground?

After use, both knives should be thoroughly cleaned with warm water, immediately wiped dry, and air-dried. Since Böhler N690 is stainless, normal wiping is sufficient – oiling the blade is not strictly necessary but recommended for longevity. Treat the leather sheath occasionally with leather care grease or beeswax to keep it supple and water-resistant.

How do I sharpen the Waidbesteck knives in the field?

Böhler N690 is excellent for resharpening – even in the field. A compact ceramic sharpening rod or a pocket sharpening stone with a grit of 1000–2000 is sufficient to quickly refresh the edge. For the home workshop, we recommend waterstones with grits of 1000–6000 for a razor-sharp edge. Thanks to the good edge retention of N690, resharpening is rarely necessary during normal hunting operations.

How heavy is the Waidbesteck set?

The complete Fyreza Waidbesteck set weighs 520 g – a balanced weight for a two-piece hunting knife set with a leather sheath. It is compact enough for daily use in the hunting ground without sacrificing robustness or stability. The weight is distributed between both knives and the leather sheath, making the set comfortable to carry on the belt.
