The Fyreza Santoku Pro is a handmade Santoku made from Böhler N690, stainless, with a blade length of 21 cm, blade height of 5.5 cm, total length of 34.5 cm, and a weight of approximately 250 g. 58 HRC, handle optionally made from walnut or maple, leather sheath included.
Japanese blade shape, Austrian steel
Santoku means "three virtues": meat, fish, vegetables. The slightly curved blade with a rounded tip can be used for pushing and rocking, and its 5.5 cm height keeps knuckles clear of the board. It's a knife that handles most kitchen tasks by itself, and without requiring much maintenance.
Böhler N690, stainless, 58 HRC
N690 is a stainless chromium steel from Austria, ranked among the top-tier knife steels. It holds its edge for a long time, tolerates fish, tomatoes, and lemon without staining, and despite its hardness, it can be easily resharpened on a whetstone. No oiling, no patina management: rinse, dry, done.
Walnut or Maple
Walnut wood is dark and warm, with each grain being unique. Maple wood is light and clear, offering a calm contrast to the blade. Both handles are ergonomically shaped and individually fitted by hand.

What is Böhler N690 steel and why is it special?
Böhler N690 is a high-quality stainless chromium steel of Austrian origin and belongs to the absolute top class of knife steels. With a hardness of 58 HRC, it offers the ideal balance between sharpness and robustness. It is highly corrosion-resistant, easy to resharpen, and its fine grain allows for an exceptionally sharp, long-lasting edge. For a kitchen knife used daily, there is hardly a better choice.
What is a Santoku knife best suited for?
The Santoku is the most versatile knife in Japanese cuisine. It is excellent for cutting vegetables, fish, and meat – using both pulling and pushing cuts. The wide, flat blade (21 cm long, 5.5 cm high) enables efficient chopping and rocking. Thanks to its balanced geometry, it is ideal for both home cooks and professional users alike.
What is the difference between a Santoku and a chef's knife?
A classic chef's knife has a curved blade and is particularly suitable for rocking cuts. The Santoku, on the other hand, has a flatter blade with a slightly rounded tip – ideal for precise pushing cuts and working on a cutting board. It is generally shorter and lighter than a chef's knife, making it particularly easy to handle. The Fyreza Santoku Pro combines this Japanese geometry with European steel quality.
Is the Santoku Pro stainless?
Yes, Böhler N690 steel is a stainless chromium steel with high corrosion resistance. This makes the Fyreza Santoku Pro particularly suitable for moist foods, fish, and acidic ingredients such as tomatoes or citrus fruits. Unlike carbon steel knives, it does not need to be oiled and is significantly easier to maintain – without compromising on sharpness.
How do I sharpen the Santoku Pro correctly?
Despite its high hardness of 58 HRC, N690 steel can be sharpened easily on a whetstone. We recommend water stones with a grit of 1000–2000 for basic sharpening and 3000–6000 for finishing. For daily use, a ceramic honing rod is sufficient to regularly align the edge. A leather strop ensures the final touch and a razor-sharp edge.
How do I care for the Santoku Pro correctly?
The Santoku Pro should be cleaned by hand after each use with warm water and mild dish soap and wiped dry immediately. Dishwashers should be avoided, as the heat and aggressive cleaning agents can damage the wooden handle and the blade in the long run. Treat the wooden handle occasionally with wood oil or beeswax to keep it supple and protect it from moisture.
Which handle is better – walnut or maple?
Both handle versions are made of high-quality wood and sit comfortably in the hand. Walnut is dark, warm, and full of character – it develops a noble patina over time and fits a classic, rustic kitchen style. Maple is light, clear, and timeless – it provides an elegant contrast to the steel blade and gives the knife a modern, Nordic flair. The choice is purely a matter of personal taste.
How long is the blade of the Santoku Pro?
The blade of the Fyreza Santoku Pro is 21 cm long, 5.5 cm high, and 2.5 mm thick. The total length of the knife is 34.5 cm. These dimensions correspond to a full-fledged professional kitchen Santoku and make it the ideal primary blade in the kitchen. The weight of approx. 250 g ensures a perfect balance between blade and handle.
