Peka oder Dutch Oven? Der ehrliche Vergleich

Both cook over embers, both deliver tender meat and soft potatoes after two hours of patience. Nevertheless, Peka and Dutch Oven are two different tools. Those who know both will reach for one or the other depending on the dish. Here is the comparison without sales talk.

What is what?

The Dutch Oven is a heavy cast iron pot with three legs and a lid, whose rim holds the embers. It comes from American campfire cooking and has been an integral part of the BBQ scene in Germany for about fifteen years.

The Peka (also called Sač in the Balkans) is a flat pan with a curved steel dome. The dome is placed on the pan, and a ring that holds the embers goes on top. Cooking is done from above and below; the dish lies flat and wide rather than high in the pot. The Peka is the quintessential Sunday meal in Bosnia, Croatia, and Montenegro.

Where the Dutch Oven is better

  • Liquids and tall dishes. Stews, chili, goulash, soup: anything that needs volume belongs in the pot. The Peka is too shallow for that.
  • Long cooking times without replenishing. The thick cast iron wall holds the temperature for hours. For pulled pork over eight hours, this is a real advantage.
  • Compactness. A Dutch oven fits in the trunk next to the rest. A 50 cm Sač needs its own space.

Where the Peka is better

  • Meat with a crust. Because the dish lies flat and the dome sits directly over the surface, lamb or chicken gets crispy on top while cooking in its own juices underneath. Everything steams in a Dutch oven.
  • Quick regulation. Too hot? Remove embers from the ring. Too cold? Add more. The thin steel reacts in minutes; cast iron takes half an hour.
  • For many people. A 50 cm Sač feeds ten people with one course. That would require two Dutch ovens.
  • Handling. No cast iron that breaks if it falls off the table. And the pan can also serve as a campfire pan without the dome.

Do you need both?

Honestly: If you already have a Dutch oven and mainly cook stews with it, you don't need a Peka. But if you make whole pieces of meat with vegetables, you will get a better result with the Peka, because it won't lack a crust. And if you don't have either yet and like to cook for many people, the Peka offers more versatility: It replaces a roasting pan, bread baking form, and grill pan all in one.

What the Peka can't do: soup. What the Dutch oven can't do: a crust on a rack of lamb. The rest is a matter of taste.
