Product description

The Fyreza Mini Kiritsuke is a small, hand-forged carbon steel kitchen knife with a 12.5 cm blade length, 2.7 cm blade height, 26 cm overall length, and weighing around 100 g. Tanto tip, walnut handle with buffalo horn bolster, leather sheath included.

Small, light, always with you

The Mini Kiritsuke is the knife for everything that makes a large chef's knife too big: peeling, dicing onions, chopping herbs, cutting fruit. The straight blade with a tanto tip gives you full control for delicate tasks. At 100 g and 26 cm, it also fits in a backpack, by the campfire, or on the camping table.

Carbon steel with forged finish

The blade is hand-forged, with the hammer marks on the forged finish remaining visible. Carbon steel with 58 HRC takes a finer edge than stainless steel and is easy to resharpen. It is not rust-proof: dry it, oil it occasionally, and a protective patina will form.

Handle and Sheath

Walnut wood with natural grain, black buffalo horn bolster at the transition to the blade, inlaid brass medallion. The handmade leather sheath with brass rivets and snap closure protects the blade in your bag and backpack. Regarding the law: With a 12.5 cm blade, the knife is just above the 12 cm limit of § 42a WaffG, so in Germany, it must be transported securely in a backpack, not readily accessible on a belt. More on this in our article on knife law.

What steel is the Fyreza Mini Kiritsuke made from?

The Fyreza Mini Kiritsuke is hand-forged from high-quality carbon steel. Unlike stainless steel, carbon steel offers superior sharpness and a significantly longer edge retention. The characteristic forged finish not only gives the blade its appearance but also a natural protective layer. Over time, the knife develops an individual patina – a sign of genuine use and lived craftsmanship.

What is this small carbon steel knife best suited for?

The Mini Kiritsuke, with its 12.5 cm blade and precise Tanto tip, is perfectly suited for fine cutting tasks in the kitchen: chopping herbs, slicing vegetables, trimming meat, or precisely filleting small pieces. Thanks to its compact size, it's also ideal as an outdoor knife for camping or hunting – lightweight, handy, and extremely sharp.

What is the difference between a Kiritsuke and a normal kitchen knife?

A Kiritsuke is a Japanese knife type with a characteristic, slightly angled tip – the so-called Tanto or K-Tip geometry. This allows for more precise cuts and greater control when working with the tip. Compared to a classic chef's knife or Santoku, the Kiritsuke is more versatile and suitable for both push and pull cuts. The Fyreza Mini Kiritsuke combines this geometry with European hand-forging artistry.

How do I properly care for a hand-forged carbon steel knife?

Carbon steel knives should be wiped dry immediately after each use and never cleaned in the dishwasher. To prevent rust, it's recommended to occasionally rub the blade thinly with a neutral oil – e.g., camellia oil or mineral oil. For longer storage, keep it dry and ventilated. The included leather sheath optimally protects the blade and handle.

How do I properly sharpen a carbon steel knife?

Carbon steel sharpens exceptionally well and takes a very fine edge. Water sharpening stones with grits of 400–1000 are ideal for basic sharpening, and 2000–6000 for refining. Alternatively, a leather strop can be used to refresh the edge between sharpening sessions. Regular use of a honing steel helps maintain sharpness in daily use for a long time.

Does carbon steel rust – and is that a problem?

Carbon steel is not stainless and can develop stains or light rust if not properly cared for. However, this is not a quality defect but a natural characteristic of the material. Over time, a protective patina forms, making the blade more resistant. Light rust can be easily removed with a fine abrasive fleece or cork and some oil. If you care for your knife regularly, you will enjoy it for decades.

How long is the blade and how thick is it?

The blade of the Fyreza Mini Kiritsuke is 12.5 cm long, 2.7 cm high, and only 2 mm thick. This slender blade geometry ensures precise, clean cuts with minimal resistance. The total weight of 100 g makes the knife light enough for hours of work without fatigue – while also being robust enough for more demanding cutting tasks.

What is included in the delivery?

The Fyreza Mini Kiritsuke comes with the knife itself and a handmade leather sheath with brass rivets and a snap closure. The sheath reliably protects the blade and allows for safe transport. Each knife is handcrafted and, due to the natural materials – walnut wood, buffalo horn, carbon steel – is a true unique piece.
